Spring is on the way and what better way to make use of the new spring vegetables than with this delicious, fresh zucchini soup…
1 onion chopped
2 cloves of garlic
3 small potatoes chopped
3 zucchini chopped
1/2 liter of milk
1 veggie bouillon cube
Salt, pepper (lemon pepper if you have it), hot pepper if you like some
First, caramelize the onions until clear. Then add the garlic in the same pan for about 30 seconds. Then add the zucchini until it is softened. Then add the potatoes until soft (maybe 1-2 mins).
Then add your milk and top off the mix with water (just enough to cover the top of the veggies) and pop in your bouillon cube. Bring the pot to a boil and then simmer for about 25- 30 mins.
Feel free to add grated cheese into the soup (any kind you like) and enjoy!
